Quick dinner alert!
I’m married to a man who is always hungry. To him quick dinners are the best dinners. Especially days after work. This is my go to dinner when I don’t feel like being too creative and its always a winner.
4 chicken cutlets
1 cup of flour
1 tbs powdered sugar
1 tsp cajun spice
1 tsp paprika
1 tsp garlic powder
1/2 tsp basil powder
1/2 tsp pepper
2 tsp salt
2 tsp brown sugar
2 tbs franks wing sauce
Bun of choice
Step 1: Mix together salt & brown sugar. Season padded dry chicken on both sides.
Step 2: In a medium bowl combine flour, sugar, cajun spice, paprika, basil, garlic powder and pepper.
Step 3: Whisk eggs, milk and franks hot sauce together.
Step 4: Heat a heavy pot with atleast 3 inches of oil.
Step 5: Dip each piece of chicken working with one at a time into the flour mixture shaking off excess than into the egg mixture and back into the flour and place on a cooling rack while getting the other pieces ready.
Step 6: When oil is ready, place chicken in working with two pieces at a time. Turn once with a total cook time of 6-8 mins. Transfer to the cooling rack to drench off oil.
Step 7: Toast bun of choice and assemble as you like. Mayo, chicken, lettuce (sometimes) and pickles is my choice 🙂 mmmmm
