Shrimp and khodu is a favorite in our marriage. We always enjoy it and crave it often. Bottle gourd isn’t sold around our neighborhood so when we’re out shopping in indian and asian markets we make sure to grab one!
1 lb of large shrimp deveined
1 medium sized bottle gourd/khodu
1 large onion chopped
3 cloves of garlic minced
1/2 tbs turmeric
1/2 tbs corriander powder
1/2 tbs cumin
1/2 tbs curry powder
Cilantro for garnish
Peel, cut and rinse khodu. Put into a pot and add water just so the squash is covered. Dash in some salt and let it cook under high heat.
Then in a seperate pan heat oil and add onions and cook until translucent. Add salt, depending on what kind you use. I use table salt and put 1 tbs.
Add garlic cook for a few more minutes
Season with turmeric, corriander, cumin and curry powder.
Mix. Make sure shrimps are cleaned and ready to go.
Add to the pot and let them cook. About 3 to 4 mins.
Add the boiled khodu to the pot using a slotted spoon. Dont throw out the water use it for the curry. Add the desired amount.
Add the chilies. Let it come to a complete boil and turn off heat.
Garnish with cilantro.
I hope you enjoy this as much as we do. You could cook the squash in the pot with the onions before adding the shrimp. But I dont like cooking shrimp in a broth so that’s why I do it this way. Also you can add chili powder to the onions but my mom always made it without and added heat with the chilis. It’s what makes for a refreshing and light curry perfect for the summer.
