Mini Chocolate chip Biscotti

I used to think biscottis were too much of a hassel to even attempt. But they pair so well with coffee or tea. Couple of trials and flavors later these are my favorite. Because chocolate. Even better, mini chocolate chips just make all things better. So dont fear, try these! They even go well with a glass of milk. 

Ingredients:

1/2 cup of softened unsalted butter

1 cup dark brown sugar

2 large eggs

1 tsp vanilla extract 

2 cups all purpose flour 

2 tsp baking powder 

1/2 tsp salt

1 pack 12 oz mini chocolate chip 

Preheat oven to 350 degrees. 

In an electric mixer cream the butter and brown sugar. Add in one egg at a time. Then the vanilla extract. 

In a separate bowl mix flour, baking soda and salt. Add the dry ingredients to the mixer, turn on low till incorporated. Mix in the mini chocolate chip. You can use regular chocolate chip but the minis give you a bite of chocolate in every bite!

In a baking tray make your logs. The dough is so sticky right now. I find it best to shape using a rubber spatula. For mini biscottis you would want to shape into them into about two 2 by 10 inch logs. 

Bake for 25 mins. 

Remove from oven and let cool for 20-30 mins. They need to cool down so when you slice them they don’t crumble. 

Taking one log at a time, transfer to a cutting board and slice in about 1/2 inch thickness. 

Place on one side on two baking trays. 

Bake for 15 mins. Remove from oven and turn them over and bake for another 15 mins. Let cool.  

You know what you just did there? Made your own biscottis. Go you! Grab yourself a glass of milk and enjoy one. You deserve it. This batch makes quite of few and are great for sharing. Now if you’re not sharing, put them in a tight sealed container. 

I made these for the first time this passed Ramadan. My father in law is a man of a few words so when he said yum! I felt happiness! I hope you enjoy them toooo!
