Ramadan Mubarak everyone. Love this time of year. Always feel so cleansed and close with family. Love the routine. Also being married I love the little tradition me and my husband are building. Growing up with a big family, Ramadan shopping was so much. Lots and lots of food is an understatement and now being a family of just two I laugh a little at our groceries. Microscopic in comparison. Still it gets me excited and I am so thankful to go through another one.
I wanted to share a recipe that’s strays away from the normal Bengali iftaars. I love them but sometimes I need a change. For those days I’m hoping this recipe can help.
1lb ground chicken
1/4 cup breadcrumbs
1/2 cup parmesan
1 small onion diced
2 cloves garlic minced
Handful of basil chopped
Salt and pepper to taste
Jar of Marinara sauce
Basil to garnish
Preheat oven to broil.
Combine the onion, garlic, parmesan, breadcrumbs, egg, basil in a bowl and add salt and peppper. Combine in ground chicken. Roll into even size balls. You can either bake them at 425 degrees for 15 or cook them on a skillet.
Heat a skillet over medium with a tablespoon of oil. Place in meatballs.
Don’t put the heat up too much because it will just cook the outside and leave the inside raw.
Cook them till all sides have a nice golden brown.
Once done transfer to a bowl and discard the oil. Add in marinara sauce and lower heat to simmer. Its gets bubbly and messy!
Now place the meatballs back into the skillet.
Toss them lightly till their all covered in the sauce.
Cover with desired amount of shredded mozzarella. I used about 1 cup.
Now place the skillet under broiler for 3-5 minutes. Till the cheese gets a nice brown. Garnish with a little fresh basil.
All done! Serve with pasta, in a hero or eat alone. Yummm 🍝
