Beef Curry

I’m a sucker for soft cooked beef curry. It’s so easy to make! AND Leftovers with roti the next day are even better. So excited to finish what I have at home just writing this! The way my mom taught me is just mix everything in a pot and letting in cook for 2-3 hours.

2 lbs of beef (I prefer with bone cause it’s awesome)
3 tablespoon vegetable oil
1 large onion chopped
1 tablespoon garlic paste
1 tablespoon ginger paste
1/2 tablespoon turmeric
1/2 tablespoon cumin
1/2 tablespoon corriander
1/2 tablespoon curry powder
1 tablespoon red Chilli powder
1 stick of cinnamon
2 bay leaves
Salt to your taste preference

In a large pot place the meat and add all other ingredients on top. Using a wooden spoon mix everything so its covered well.
*At this point I cover and refrigerate if I am cooking the next day otherwise I cook right away.

You may need to add more oil at this time. Turn on heat and let meat cook. Mix often in the beginning so it doesnt stick until the water from the meat releases.

Lower heat to medium low and let meat simmer slow for 1 hour. You can add potatoes to the meat during this time if you prefer. Add the desired amount of water you like. Remember it will cook for another hour so water will reduce by half. I like adding 2 – 2 1/2 cups. Change heat to high to raise the temperature of the added water. Once is completely bubbling lower it and let it cook for another hour.

Now the beef should be tender. You can cook it longer if you have the time. The longer the better!
