One Skillet Breakfast Hash

gredients:
– [Turkey] Bacon chopped
– Potatoes (2) diced skin on
– Small onion chopped
– Red bell pepper diced
– Mushrooms sliced
– Cheddar Cheese shredded
– Eggs
– Green onions for garnish

Heat skillet spray cooking oil and cook [turkey] bacon till brown. Add more oil if needed. Add onion and sautée till soft. Toss in chopped potatoes and season with salt, red pepper flakes & garlic powder.

Cover and cook through. About 10 mins mixing often. Add red bell pepper & mushrooms and cook for another 5 mins. When potatoes are soft to desired doneness lower heat to medium and crack in eggs.

Cover and let the eggs cook, but still runny inside. Turn off heat, top with cheese, cover for 2 mins to melt. Garnish with green onions. Enjoy 🍳 ☺
