1 lb fresh salmon fillet
1/2 cup red pepper chopped
1 clove garlic minced
1 bunch green onions chopped
1/3 cup panko breadcrumbs
1 egg slightly beated
1 tablespoon fresh lemon juice
1/2 tablespoon soy sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
Clean salmon and pat dry. Cut into small pieces and add pepper, breadcrumbs garlic, and green onions.
Mix all ingredients together. In a small bowl whisk egg lightly add soy sauce, lemon juice, salt and pepper to combine. Add to the fish mixture and make into patties. About 3-4.
Put into refrigerator for upto 1 hour so patties hold together while cooking.
When ready, heat a pan grill and use cooking spray. Add patties to the pan and cook through about 5 to 6 mins on each side.
Serve with sriracha mayo and top with avocados. Nom!
