Taco taco tacos

I love tacos, hard or soft shell. Gimme chicken, beef or fish. I eat them all! Here’s a simple recipe for chicken tacos that can be easily followed and replaced with any fillet fish of your choice! Also topped with a fruit salsa. You’ll love it!

Ingredients:
– 1 1/2 lbs of chicken breasts chopped into small pieces
– 1 lime juiced
– 1/2 tsp paprika
– 1/2 tsp onion powder
– 1/2 tsp garlic powder
– 1 tsp oregano
– 2 cloves of garlic minced
– 2 tablespoon red wine vinegar
– 1/2 tsp black pepper
– 1/2 tsp salt

Mix all the ingredients in a bowl and let it marinate for about 1-2 hours.

– 1 onion sliced
– red/green pepper sliced

Heat a skillet with some olive oil. Add chicken mixture to it and let it cook for 20 mins tossing often. Add onions and pepper to it and let it soften another 5 mins.

If using soft tortillas heat in a small skillet. For hard shells fill with you chicken.

While chicken was marinating you can make your salsa.

– 2 nectarines
– 1 small red onion
– 1 jalapeño seeded
– 1 lime juiced
– cilantro
– 1 avocado

Chop all ingredients except avocado into small pieces. Mix in a bowl, seasoned with salt and pepper. When ready to serve add in chopped avocado.

Serve with rice if desired. Tacos are ready, enjoy!
