Chicken Parm

Simple days calls for simple meals. Let’s make some chicken parm! My husband’s favorite meal and it doesn’t require much work so that’s a win win in my book.

Ingredients:
4 pieces of chicken cutlets
2 eggs
1/2 cup of grated parmesan
1/2 cup of breadcrumbs
Tomato sauce
Mozzarella cheese sliced 
Salt and pepper

Season both sides of chicken with salt and pepper. Whisk eggs in a bowl. Combine the parmesan cheese and breadcrumbs in a seperate plate. Dip chicken into eggs and then dredge in the breadcrumbs mixture coating both sides. Set aside.

Turn on oven broiler. Spread desired amount of tomato sauce on the bottom of a baking dish.  Heat a nonstick skillet with some olive oil. Place 2 chicken cutlets at a time and cook until golden. 4-5 mins on each side. Transfer onto the baking dish. Repeat with the other two pieces.

I like putting a little more sauce on top before I cover them with cheese. Sprinkle a little dried basil on that if you like.

Place under broil for about 5-7 mins until the cheese is melted. Serve immediately.
Love this with any type of pasta and a simple salad.
